Are you looking for a good and easy recipe for oatmeal and banana muffins? There is no need to look further. Even if you are not a goddess of cooking, you can make these delicious and healthy oatmeal and banana muffins with raisins.
Good recipe for demanding children.
There are many children who claim they don’t like oatmeal. That is because they had never had these beautiful sweet rolls before. The raw material may not be your cup of tea, but by adding the sweet raisins and baking it, there is a good chance that you will change your mind. With this recipe everyone should love oatmeal. I think even fussy children will try these muffins. If your child is really picky, maybe it’s better to tell them later that these muffins are quite healthy and full of fiber, some children don’t even want to try healthy things (I know it’s stupid, but that’s how it works with picky kids))
Due to whole wheat flour and oats, this muffin will add a lot of nutritional fiber to your diet. Why do you think athletes love fiber? It is exactly what your body needs to get going. There is also fresh fruit in these muffins, so what do you not love about these muffins? I would say it is the perfect bagel for breakfast.
Ingredients for oatmeal and banana raisin muffins
1 cup whole wheat flour
1 cup instant oatmeal
¼ cup dark brown sugar
¼ cup granulated sweetener (check if you can use it for baking, not all sweeteners can)
1 teaspoon of baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ teaspoon ground cinnamon
¾ cup raisins / sultanas
3 mashed bananas
¼ cup vegetable oil
½ cup buttermilk (you can also use low-fat yogurt)
Instructions for making oatmeal and banana raisin muffins
Preheat oven to 190.5 degrees C.
You will need two bowls for this recipe, one for all dry ingredients and one for wet ingredients.
In the dry bowl we will place whole wheat flour, instant oatmeal, baking powder, baking soda, salt, ground cinnamon and sugar and the sweetener.
In the wet bowl, collect the other ingredients: mashed bananas, oil, eggs and buttermilk.
Make sure all ingredients are mixed in their own bowl
Now make a well with the dry ingredients and pour the wet ingredients into the well. Fold the dough until it mixes. Stop folding as soon as possible. If you keep stirring, you’ll end up with rubber muffins, so don’t try to get rid of every lump you see.
Now take out the dough in the can of prepared muffins (I like those paper bags, it makes it easier to eat the muffins without getting your fingers dirty)
Place the can of buns in the preheated oven and enjoy the smell of fresh and healthy homemade muffins for 20 minutes.
Check with a stick to see if it’s ready
I hope you and your family enjoy these muffins as much as I do.
