Ingredients for oatmeal and banana raisin muffins

1 cup whole wheat flour
1 cup instant oatmeal
¼ cup dark brown sugar
¼ cup granulated sweetener (check if you can use it for baking, not all sweeteners can)
1 teaspoon of baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ teaspoon ground cinnamon
¾ cup raisins / sultanas
3 mashed bananas
2 eggs
¼ cup vegetable oil
½ cup buttermilk (you can also use low-fat yogurt)
Instructions for making oatmeal and banana raisin muffins

Preheat oven to 190.5 degrees C.

You will need two bowls for this recipe, one for all dry ingredients and one for wet ingredients.

In the dry bowl we will place whole wheat flour, instant oatmeal, baking powder, baking soda, salt, ground cinnamon and sugar and the sweetener.

In the wet bowl, collect the other ingredients: mashed bananas, oil, eggs and buttermilk.

Make sure all ingredients are mixed in their own bowl

Now make a well with the dry ingredients and pour the wet ingredients into the well. Fold the dough until it mixes. Stop folding as soon as possible. If you keep stirring, you’ll end up with rubber muffins, so don’t try to get rid of every lump you see.
