- 1 1/2 cups fresh breadcrumbs
- ¼ cup Parmesan cheese, finely grated
- ¼ cup fresh, finely chopped dill
- ¼ cup fresh chives, finely chopped
- Freshly ground black pepper
- Salt to taste
- 600 g fish fillet
- 2 butter spoons
- 2 tablespoons olive oil
- Asparagus, potatoes and lemon wedges, steamed
How to prepare:
Combine the breadcrumbs, cheese, dill and chives in a large, shallow dish. Season with salt and freshly ground pepper. Dip each piece of fish in the breadcrumb mixture by turning all sides to cover completely with crumbs. In a large skillet, heat the butter and oil over medium heat until the butter begins to foam. Add the fish fillets and fry them little by little until they are browned on both sides. Drain on absorbent paper. Serve with steamed asparagus, potatoes and lemon slices, or any vegetable you like.
Salmon fillets and sauteed vegetables
- 4 salmon fillets
- 6 tablespoons teriyaki marinade or soy sauce
- 50 g sesame seeds
- 400 broccoli, mangetout or your favorite vegetables
- ½ large red chili
- 2 teaspoons grated ginger
- 1 clove garlic, crushed
How to prepare
Dip the salmon fillets in marinated teriyaki and cover them with sesame seeds. Heat the oil in a pan over medium heat and fry each steak on each side for 5 minutes. Steamed broccoli and scabies.
