Italian “Sausage” Sandwiches Grilled with Spicy Peppers and Fennel-Onion


Whether eaten on a bun or on its own, pepper sausage is a delicious meal for you and your family. My first encounter with this tasty sandwich was at a county fair when I was young. It basically consisted of spicy Italian sausage, onion, green pepper, and a tomato-based sauce. Since then, I have tried many different variations of this favorite comfort food. You can experiment with different sauces, peppers, onions, and sausages to create your own masterpiece. Here are a couple of quick and easy sausage and bell pepper recipes for you to try, just in time for football Sunday!

Sausage and Peppers

What you need:

• Italian sausages 1.5 to 2 pounds
• 2 large onions, sliced
• 1 large red or yellow bell pepper, cut into strips
• 1 large green bell pepper, cut into strips
• 3/4 t of salt
• 1/2 t of oregano leaves
• 2 tablespoons of olive oil

What are you doing?

• Pour about 1/3 cup of water into a large skillet. Add the sausage to the skillet and cook over medium heat until the water comes to a simmer. Cover the pan and simmer for 5-7 minutes. Remove the lid and continue cooking, turning frequently, for about 20 minutes or until the sausage is golden brown. Set the sausage aside and add olive oil to the skillet. Heat the oil and add all the remaining ingredients to the skillet. Cook over medium heat until vegetables are golden brown and tender, stirring frequently. Add the sausage to the skillet, cover, and simmer until heated through.
• Sausages and peppers are excellent alone or with rice. They’re also delicious on a snotty bun or crunchy bun with your favorite seasonings.

Low-fat sausages and peppers

What you need:

• 14 to 16 oz package smoked turkey sausage
• 1 medium onion, sliced
• 1 large green bell pepper, cut into strips
• 1 large red bell pepper, cut into strips
• 14.5 oz can crushed tomatoes
• 4 oz can sliced ​​mushrooms, drained
• 2 tablespoons of olive oil
• 1 t of oregano
• 1 tablespoon of basil
• 1/2 t of red pepper flakes
• 1/4 t garlic salt
• 1/8 t of black pepper

What are you doing?

• Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add onion, bell peppers, mushrooms, oregano, basil, red pepper flakes, salt and pepper to the skillet and cook until the vegetables are tender but still crisp, stirring frequently. Remove vegetables from skillet. Heat 1 tablespoon of oil in a skillet. Cut the sausage in half lengthwise, then cut into 1/2-inch pieces. Add the sausage to the skillet and cook over medium-high heat until lightly browned. Add the vegetables and crushed tomatoes to the skillet and mix. Cook over medium heat, stirring occasionally, until heated through; to serve.
